One-pot pasta recipe: a family favourite
INGREDIENTS for 4 persons
12 oz gluten free pasta. (there are many kinds of gluten free pastas but I prefer those made with rice flour)
12 oz chopped tomatoes or whole cherry tomatoes
1 sliced red onion
Any other chopped vegetable you like or have in the fridge (asparagus tips, zucchini, peas, mushrooms, peppers)
4 cloves of sliced garlic
1/2 tsp red pepper flakes
4 sprigs of basil
Salt and pepper
1 cup of chopped parsley
Freshly grated parmesan cheese
PREPARATION
To a large deep frying pan add the dry pasta, garlic and all the chopped vegetables
Add 4.5 cups of cold water or your favourite organic chicken stock
Bring to the boil and begin to mix all the ingredients for 9-12 minutes until the pasta is to your liking. (I prefer it al dente)
Season to taste
Divide into 4 bowls, sprinkle generously with parmesan and garnish with the fresh parsley
